While I love to cook, I’m not so great with organisation. Weekends are busy with three kids and their activities and before you know it, I’m looking down the barrel of Sunday night wondering what I can whip up for Monday morning lunch boxes.
Using pantry staples, this sultana and oat slice from the fabulous Kayla over at My Lovely Little Lunchbox is always a winner – and no electric beaters are needed, so there’s no waking the kids!

Sultana and oat lunch box slice ingredients
- 125g butter, melted
- 1 cup brown sugar
- 1 large egg
- 1 tsp vanilla essence or paste
- 1 cup plain flour
- 1 cup traditional rolled oats (not quick oats)
- ¾ cup sultanas
- Preheat the oven to 180°C and grease and line a square (roughly 20 x 20cm) cake tin.
- Mix the melted butter with the brown sugar and whisk together until smooth.
- Add the vanilla and the egg to the mixture. Whisk well to combine.
- Stir in the flour with a wooden spoon or spatula until combined. Fold through the oats and sultanas.
- Pour the slice mixture into the prepared tin. Using a silicone spatula, be sure to push the mix into the corners.
- Bake for 20 to 25 minutes or until golden around the edges and just set in the centre. Let the slice cool completely on a wire rack before cutting into squares.
- You’ll notice there’s no self raising flour or rising agent in this slice recipe – that’s because it’s supposed to be a little bit brownie-like. We want it soft, chewy and dense in the middle.
