Kid-pleasing mini meatloaf recipe

Let’s be honest, when it comes to meals that are flavoursome but lack in the looks department, top of the list could well be meatloaf. Just remember, looks aren’t everything! Packing a delicious punch of flavour, this recipe will have the kids coming back for more!

For this meatloaf recipe, I’m using the super-handy Kmart Mini Loaf Tray. This means every little person can have their very own mini meatloaf, and slicing them in half makes great fillings for hamburgers the next day.  The recipe can also be made in a regular loaf tin, it will need to be cooked for around an hour to be cooked through.

Mini meatloaf ingredients

  • For the meatloaf:
  • 500g beef mince
  • ¾ cup red onion, diced
  • ½ cup celery, diced
  • ¼ cup tamari sauce
  • ⅓ cup tomato sauce
  • 1 cup dried breadcrumbs
  • 1 tbsp dried oregano
  • 1 tbsp fresh parsley, chopped
  • 2 tsp garlic powder
  • pinch of pepper
  • 2 eggs
  • For the meatloaf glaze:
  • ¼ cup brown sugar
  • ¼ cup tomato paste
  • 2 tbsp mild English mustard
  • ¼ tsp sweet paprika

Method

  • Preheat the oven to 180°C.
  • Give your loaf tin or mini loaf moulds a good grease to prevent anything sticking.
  • Combine all the meatloaf ingredients in a large bowl. Use your clean hands to mix it together well.
  • Fill each loaf cavity with the meatloaf mixture and pat it down gently with your hand to fill the space. Combine all the glaze ingredients in a bowl and mix until smooth.
  • Spoon or brush the glaze over the top of each meatloaf.
  • Cook mini meatloaves for 40 minutes, or until cooked through. Let rest for five minutes before removing from the mould.

Serve with salad or vegetables and enjoy!
