White chocolate and macadamia nut cookies recipe
These simple-to-make cookies are a classic favourite and go down perfectly with a glass of milk or a giant cup of tea. Bake them for a peaky pal. Whip up a batch for your school fete. Or just rustle up a couple of dozen for this week’s after-dinner treats!

White chocolate and macadamia nut cookies ingredients
- 125g unsalted butter
- ½ cup brown sugar
- ½ cup raw sugar
- 2 small eggs
- 1¾ cups of self raising flour
- ½ teaspoon of vanilla extract
- 150g of white choc chips
- 100g of chopped macadamia nuts
Method
Preheat your oven to 160°C or 320°F.
- Cream the butter and both sugars until well combined.
- Add the eggs and vanilla extract. Beat well.
- Mix in the self-raising flour.
- Add the macadamia nuts and chocolate chips. Beat until just combined.
- Use clean hands to roll into balls about 1 inch in diameter. Then flatten between palms a little and pop onto a baking tray lined with baking paper. Bake for 12 minutes or until starting to turn a pale golden colour. Cool on a rack and gobble them up!
You can make these smaller or larger … and you can switch out the macadamia nuts and white chocolate for dried blueberries, dried cranberries, milk chocolate … whatever you fancy!
