White chocolate and macadamia nut cookies ingredients

  • 125g unsalted butter
  • ½ cup brown sugar
  • ½ cup raw sugar
  • 2 small eggs
  • 1¾ cups of self raising flour
  • ½ teaspoon of vanilla extract
  • 150g of white choc chips
  • 100g of chopped macadamia nuts

Method

Preheat your oven to 160°C or 320°F.

  • Cream the butter and both sugars until well combined.
  • Add the eggs and vanilla extract. Beat well.
  • Mix in the self-raising flour.
  • Add the macadamia nuts and chocolate chips. Beat until just combined.
  • Use clean hands to roll into balls about 1 inch in diameter. Then flatten between palms a little and pop onto a baking tray lined with baking paper. Bake for 12 minutes or until starting to turn a pale golden colour. Cool on a rack and gobble them up!

You can make these smaller or larger … and you can switch out the macadamia nuts and white chocolate for dried blueberries, dried cranberries, milk chocolate … whatever you fancy!
