Pancakes are a total go-to when it comes to a comforting and delicious breakfast, but blueberry pancakes? They take it up a notch and squeeze some extra fruit into your family’s diet at the same time. Bonus!
Blueberry pancakes are a pinch to make and this recipe comes up trumps because it’s a) easy and b) fluffy as all heck.
Here’s how to win your family over and make a yummy batch of blueberry-dotted brilliance!
The best fluffy blueberry pancake recipe
Makes 10 medium-sized pancakes
Blueberry pancake ingredients
- 2 cups of self-raising flour
- 2 cups of milk
- 1/2 cup of caster sugar
- 1 egg
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- 1 cup of fresh blueberries
- 2 tablespoons of butter – for the pan
Method

- Step 1. Sift the flour and baking powder into a large bowl.
- Step 2. Add the sugar.
- Step 3. Make a well in the middle of the dry ingredients. Add the egg, vanilla and the milk.
- Step 4. Whisk together briefly until there are no lumps and it’s nicely combined.
- Step 5. Heat your frypan over a medium-low heat. Melt a small amount of the butter – about a teaspoon – and brush it all over the pan.
- Step 6. Drop a tablespoon or two of batter into the pan, easing it into a nice round shape with the back of the spoon.
- Step 7. Dot four or five – or more! – blueberries into the uncooked side of the batter.
- Step 8. When lots of bubbles appear in the uncooked side of the batter, flip your pancake and cook the other side for 2 minutes.
- Step 9. Remove and repeat with all your batter – or make what you need and pop the rest in an airtight container in the fridge to use tomorrow!
- Step 10. Keep the pancakes warm in the oven covered in foil while you’re cooking the batch.
- Step 11. Serve with maple syrup, ice cream, more blueberries and/or yoghurt. A sprinkling of chopped nuts is nice for families with no allergies too!
- Variations – omit the blueberries for fruit-phobics. Switch the blueberries for raspberries instead! YUM!
