Kid-friendly chicken sausage rolls recipe

I understand picky eaters, after all, I had one myself. One thing I learned early on was that while my youngest would be all pursed lips at the sight of our family meals – one thing he’d always break his self-imposed famine for was a sausage roll. And so, a chicken sausage roll was added to the menu!

I’ve said it before, but sausage rolls – in fact anything mince related – is the perfect meal for enabling veggie smuggling. This recipe includes zucchini, but you could just as easily add carrot and even corn kernels if you can get them past your tot’s eagle eye.Save

Chicken sausage rolls ingredients

  • 2 slices of wholemeal bread, blitzed into breadcrumbs
  • 1 medium brown onion, finely diced
  • 1 garlic clove, crushed
  • 500g chicken mince
  • 1 zucchini, grated
  • 1 tablespoon of chopped chives
  • 3 squares of frozen puff pastry, semi thawed and still attached to their plastic sheet
  • oil
  • salt and pepper
  • 1 egg
  • sesame seeds for sprinkling on top

Method

  • Preheat oven to 200° and prepare two oven trays by lining with baking paper.
  • Heat a frying pan and a tablespoon of oil over medium low heat. Add onion and garlic and cook, stirring for around five minutes or until soft. Let cool slightly.
  • In a large mixing bowl add the cooked onion and garlic mixture, chicken, zucchini, chives and season with salt and pepper. Mix together with clean hands until well combined.
  • Add the bread crumbs to the bowl and again, mix thoroughly.
  • With a sharp knife, cut your puff pastry squares in half through the middle. Leave them on the plastic sheet – it will make moving the pastry much easier. Spoon the chicken mince mixture into the centre of each half.
  • Wet the edges with water and a pastry brush and fold the edges in to the middle, tucking one under the other. Roll them over so the seam is underneath.
  • Whisk the egg with a fork until lightly beaten. Using a pastry brush, brush the top of each long sausage roll with egg and sprinkle with sesame seeds.
  • Cut each long sausage roll into six even pieces and place them on the oven tray. Cook for 20 minutes or until pastry has turned lightly golden in colour.

  • Best served warm with sauce – any leftovers are great cold the next day with mayonnaise!
