Healthy green gobblin’ broccoli soup recipe
What better way to sell some vegetable-packed soup to your kiddos than with a little bit of an action-packed flourish?!
This soup is very easy to make and extra nourishing. If you’re less of a super villain and more of a superhero, perhaps you could call this Incredible Hulk soup instead? Honestly, it’s worth a shot and who knows, your child might actually buy it!
If you’re an adult, you don’t need this soup sold to you. It’s delicious and nutritious. You can adult it up with some blue cheese or some cheesy toast on the side, if that sounds like your cup of tea. #YUM
Green gobblin’ broccoli soup recipe
Serves 4
Ingredients:
- 2 tablespoons olive oil
- 1 leek, washed and white and pale green part finely sliced
- 2 celery stalks, sliced
- 2 garlic cloves, crushed
- 2 potatoes, peeled and roughly chopped
- 1 kilogram broccoli, stalks and florets separated
- 6 cups stock (chicken or vegetable)
- 1/2 cup of cream
- chopped chives
- salt and pepper
Method
Step 1. Fry the leek, celery, garlic in the olive oil over medium heat until soft.
Step 2. Add the potatoes, chopped broccoli stalks (not the florets) and stock.
Step 3. Simmer for 30 minutes, covered, until very soft.
Step 4. Add the florets, salt and pepper and cook until the broccoli florets are just tender but still bright green. The colour of the soup relies on this step being speedy and the broccoli retaining its green-ness.
Step 5. Blend with a stick blender, regular blender or in a food processor until as smooth as possible. It needs to be smooooooth so take your time with this bit!
Step 6. Return to low heat and stir in cream.
Serve with sour cream and a sprinkling of chives (and more pepper if you like!)
