Delicious chocolate chip muffins recipe

When baking, there’s a fine line between what is a muffin and what is cake, and this recipe is most definitely all muffin. Sweet and dotted with a whole whack of chocolate chips, its texture is soft on the inside with a nice crust – and anything but heavy. If you want choc chip muffins just like the ones at your local cafe, this recipe is worth a go!

The secret in making muffins is less mixing is more. Resist the urge to beat the mixture until smooth, you want to gently fold the mix until just combined, no further! Do reserve some of the chocolate chips to dot on top before baking, after all, we eat with our eyes first (and who doesn’t love a bit of extra chocolate in that first bite?).

Chocolate chip muffins ingredients

  • 2 cups plain flour
  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 115g butter, melted and cooled
  • 2 large eggs, lightly beaten
  • ⅔ cup buttermilk
  • 2 teaspoons vanilla essence
  • 1½ cups chocolate chips

Method

  • Preheat the oven to 190°C. Line a standard muffin tin with 12 muffin cases or paper liners and set aside.
  • In a large bowl, sift the flour with the salt and baking powder. Add both sugars to the bowl and whisk together.
  • In a smaller bowl or jug, whisk together the melted butter, the eggs, buttermilk and vanilla essence until well combined.
  • Using clean hands, create a well in the centre of the dry ingredients. Pour the wet mixture into the well and gently stir until combined with a wooden spoon.
  • Add the chocolate chips (reserving a tablespoon or so to add before baking) and gently fold them through the mix. Be gentle - an overworked mix will make flat muffins.
  • Spoon the mixture in to the prepared cases equally and gently. Add extra chocolate chips to the top of the muffins if you feel they need it. And of course they do.
  • Bake in the oven for 18 to 20 minutes or until a skewer comes out clear of any muffin mix (melted chocolate is ok though). Remove from the oven and allow to cool on a cooling rack before serving. Unless you prefer them warm, which I completely understand.
