Have you tried making your own fruit leathers? It’s a slow and steady journey, but a tasty one – and an awesome way to use up excess fruit in the fruit bowl!
It doesn’t get much easier than this. With no added sugars or thickeners, all you need is your fruit of choice to make these lunch box treats. You could even try mixing a couple of fruits for a flavour sensation; apple and pear together would be a yummy combination.
For apple fruit leathers
5 large apples
½ cup water
For strawberry fruit leathers
- Preheat the oven to the lowest possible temperature, around 70°C.
- Peel the apples and cut into small cubes.
- In a saucepan, cook the apple in the ½ cup of water on medium high heat for 10 minutes or until soft.
- Drain the apple, let cool slightly and blend in a food processor until it becomes a smooth puree.
- On a baking tray lined with baking paper, spread the apple mix evenly into a rectangle shape.
- For strawberry fruit leathers, simply quarter the fruit and blend in a food processor until smooth. Pour onto a prepared tray (it will be quite runny) and spread out evenly.
- Bake in the oven for four hours, or until the middle is no longer damp or sticky and the fruit edge comes away from the baking paper easily.
- Using clean kitchen scissors, cut the fruit leathers into rectangles, peel off the baking paper and roll. The edges will be crispy which you can discard – or throw caution to the wind and just eat them!
Keep in an airtight container in the fridge and hide them well or the kids will devour them in one afternoon.
