Ruled by food since forever, one of my favourite primary school memories is the big jar of dried fruit squares available from the school canteen. Sure, they were rolled in caster sugar which might have sealed the deal, but they were delicious all the same. I’m thrilled to be able to create a similar, healthier version of the treat at home and now you can too!
The great news here Babyologists is you really can use any dried fruit you like – including all those random bags in your pantry. There’s no added sugar to be seen in this recipe, but do bear in mind dried fruit is generally high in natural sugars, and as such these bite size treats are still best regarded as that – a treat.
225g soft dried apricots
80g dried apple
60g dried pitted dates
100g desiccated coconut, plus 1/3 cup extra for rolling in.
- Armed with a food processor, plug it in and pop all the ingredients in there. Remember to reserve that extra coconut for rolling in. Whiz on a medium – high speed for around 20 seconds to break up the fruit. Scrape down the sides of the bowl and blitz on full speed for a further 30 seconds.
- Line a small loaf tin with baking paper. Tip the fruit mix in and push around the tin to make an even layer. Press and level it with a glass. Put it in the fridge for an hour, or even better, overnight.
- Remove from the tin and cut into bars. Then cross cut to create small squares.
- Tip the reserved coconut into a zip-lock bag or a bowl. In batches, add the fruit squares and shake the bag (or bowl) to cover squares in coconut. That’s it!
Dried fruit squares are best kept in the fridge in an airtight container.
