If you loved our post on Lunch Box Dad and his epic lunch box ideas, then you will flip for these pancake sensations. Saipancakes is the breakfast batter brain child of Nathan Shields, illustrator, maths teacher and professional dad.
Saipancakes began during a nine-month adventure on the island of Saipan where Shields would start each day by whipping up a batch of pancakes in various characters, from Disney princesses for his daughter to Angry Birds for his son. From these humble beginnings Shields has ventured into caricatures of celebrities and even people he meets along the way.
Sure, being an illustrator certainly helps this pancake dad with his designs, but he isn’t shy about sharing his secrets. Shields swears by wide-mouth squeeze bottles, an extra-wide spatula from Ikea, an infrared thermometer and a non-stick pan.
And just what is his secret to success? Shields writes that he has done a lot of experimenting with different mixtures to get the perfect batter but his go-to recipe is (write this one down) three cups of flour, two tablespoons of baking powder, two teaspoons of salt, two tablespoons of sugar, ½ cup of apple sauce, three tablespoons of melted butter and two and ¾ cups of soy milk.
However, the pancake master also admits, “Most days I take the easy road and go with an off-the-shelf mix”.
We would say that these ingenious pancake creations are a hit with his children too, especially his magic treehouse and Frozen princess pancakes.
