I have to say I’m absolutely nuts about cakes! It might be odd to some, but I like looking at and baking cakes more than I like eating them and it’s the really creative ones I fall in love with. Like the scrumdelicious Rainbow Cakes we featured in January 2010 – I copied one for my youngest son’s third birthday and the thrill of the cutting had me jumping up and down with excitement!

While we’re on the topic of Red Velvet Cake, this old Southern US favourite is catching on all over the world. We can’t buy the packet mixes over here, but we sure can whip them up from scratch.
