It recently dawned on me during our family holiday that it had been five years between visits to Coffs Harbour – which really translates to five years between devouring an icy cold, chocolate and nut covered banana at the tourist hotspot The Big Banana. While relishing that first bite of frozen sweet treat, my youngest child asked me – but why didn’t you just make them at home? Why indeed? Come join me in recreating Coffs’ famous treat, which you can devour whenever you like – no holiday needed!

Choose a nice size banana – not too big or it’ll be too heavy for the pop stick, but not too small that it will split from the pop stick. I know folks, these are the big banana issues. For littlies, cut a banana in half to make two smaller portions.

Chocolate covered banana pops ingredients

  • 5 bananas
  • 1 cup of dark chocolate melts
  • 1 tablespoon coconut oil
  • toppings of choice – crushed nuts, sprinkles, or crushed freeze-dried fruits are all great
  • 5 pop sticks

Method

  • Line a baking tray with baking paper and make room in your freezer for it to fit.
  • Peel your bananas and cut the bottom of them off to give a flat edge. Insert a pop stick into the fruit, pushing it up about a third of the banana length. Lay the bananas on the baking tray and freeze them for at least a few hours.
  • In a heatproof bowl, melt the chocolate and coconut oil in a microwave in 30 second bursts. Stir between each burst until the chocolate is melted and the mixture is silky smooth.
  • Have your toppings at the ready. Working quickly, use a spoon to coat the banana in chocolate and then quickly cover with your topping, allowing it to stick to the melted chocolate. Return each banana to the tray.
  • Eat your chocolate covered bananas straight away or keep them in the freezer for later!
