Super quick and easy cornflake cookies recipe

We all hit those days where we realise a bit too late that we actually don’t have enough stuff to pop in the kids’ lunch boxes – oops!

Don’t panic though – just keep a box of cornflakes in the pantry so you can whip up a batch of these yummy cornflake cookies in less than half an hour.

There’s really nothing better than delicious, still-warm cookies in the lunch box!

Cornflake cookies ingredients

  • 2 cups sifted plain flour
  • ½ teaspoon baking powder
  • 250g margarine
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups cornflakes (I find Kellogg’s brand hold their crunch best)
  • ½ cup chocolate chips (optional)

Method

Preheat oven to 180°C and line your baking trays with baking paper

  • Beat margarine and sugar using an electric beater until light and fluffy.
  • Add eggs and vanilla, beat well until completely combined.
  • Sift together flour and baking powder and add to the bowl. Beat slowly to incorporate (or risk being showered in flour!).
  • Add cornflakes and chocolate chips (if using) and mix well.
  • Drop tablespoons of the mixture onto lined baking trays and bake for about 10 minutes or until the edge of the biscuit turns golden.
  • Transfer to a wire rack to cool completely – if they last that long!

Notes

  • This recipe yields approximately 30 biscuits and full original recipe credit goes to the Kellogg’s team for this family favourite – though it appears they don’t claim fame to the chocolate chip addition!
