Sometimes you just want a really nourishing and hearty soup to eat on a chilly day. This soup is that. It’s jam-packed with flavour and goodness and easy to whip up from things you’ve got on hand. (If you’ve got a leek or two on hand, that is!)

This is my go-to soup if I want a boost or need to cook something to drop off to a peaky friend. And all my kids love it, which is a win!

This recipe includes a tiny bit of bacon for some extra flavour, but if you are a vegetarian you could definitely give that a miss and perhaps caramelise the onions and leeks nicely to add a flavour punch before you move on with the recipe. You could also add a tin of borlotti beans for some extra oomph.

The basil is a lovely fresh flavour in this soup, but you could also switch it out for another favourite herb if you prefer.

Quick family-style French country soup recipe

Serves 6 with crusty bread

  • 4 potatoes, diced
  • 100g bacon, diced
  • 1 onion, diced
  • 2 small leeks, white parts sliced finely
  • 1 440 gram tin of diced tomatoes
  • a handful of green beans, sliced
  • 1/4 cup of chopped basil
  • 3 cloves of garlic, crushed
  • 1 teaspoon of sugar
  • salt and pepper
  • 2 tablespoons of olive oil
  • 1.5 litres of chicken stock

Method

Step 1. Warm the olive oil over medium heat and saute the bacon, potato, leek, onion and garlic for around 5 minutes.

Step 2. Add the tomatoes, stock, basil, a teaspoon of sugar and some salt and pepper.

Step 3. Simmer for 15 minutes or until potatoes are soft.

Step 4. Add the beans and simmer for another few minutes until the beans are just tender.

Step 5. Serve with crusty bread, a sprinkling of basil and more salt and pepper.

This soup is even better the next day, so you could make a double batch and pop some in the fridge for another time? It also freezes beautifully.
