Cafe-style banana bread recipe

Cafe-style banana bread recipe
- 2 eggs
- 1/3 cup buttermilk
- ½ cup vegetable oil
- 1 cup mashed banana
- 1 cup white sugar
- ½ cup brown sugar
- 1¾ cups plain flour
- 1 tsp vanilla essence
- 1 tsp bicarbonate soda
- ½ tsp salt
Method
This Chef In Training recipe is the very closest I’ve come to the banana bread holy grail – and you absolutely must cut it in nice big thick slices – and slather it with butter. Or that could be just me. No judgement please.
- Preheat oven to 160°C. Grease and line a loaf tin (sized approximately 22cm x 12cm) and set aside.
- In a large bowl, using a whisk or electric beaters, combine the eggs, buttermilk and oil until well mixed and smooth.
- Add in the mashed bananas, both sugars, and the vanilla and mix well.
- Sift in the flour, baking soda and salt and mix until just combined – don’t over mix!
- Pour the mixture into your greased loaf tin and bake at 160°C for an hour. When the hour is up, insert a skewer – if it comes out dry, it’s done – if the skewer is wet, continue baking, checking every five minutes until done.
- Let sit in the tin for five minutes after taking it out of the oven, then turn out onto cooling rack to cool completely.
Cut in thick slices and enjoy!
