A chocolate lover’s delight, this no-bake, melt and mix recipe for hedgehog slice is a rich, velvety, crunchy dream come true. Warning: You won’t be able to stop at one piece! 

This recipe needs to set in the fridge – no baking required!

No-bake hedgehog slice ingredients

  • 250g packet plain biscuits such as Arnott’s Scotch Fingers
  • ½ cup desiccated coconut
  • ½ cup pecans, chopped
  • 2 tbsp cocoa
  • 150g dark chocolate Nestle Melts (or chopped dark chocolate)
  • 100g butter, cubed
  • 395g tin condensed milk
  • TOPPING INGREDIENTS:
  • 200g dark chocolate Nestle Melts (or chopped dark chocolate)
  • 50g butter, cubed

Method

  • Grease and line the base and sides of a slice tin with baking paper and set aside.
  • In a small saucepan, heat the dark chocolate, butter and condensed milk, stirring over a low heat for five minutes or until the mixture has melted and is silky smooth. Set aside for a few minutes to cool.
  • In the meantime, put the biscuits into a zip lock bag. Be sure to squeeze any excess air out before sealing the bag. Place between a folded tea towel, gently hit with a rolling pin to crush biscuits. Make sure you have some bigger pieces in there!
  • Add the crushed biscuits, coconut, pecans and cocoa to a large mixing bowl.
  • Pour the melted chocolate mixture into the dry ingredients. Mix well for everything to combine.
  • Press firmly into the prepared slice tin. Refrigerate for 30 minutes or until firm.
  • To make the chocolate topping, place the butter and chocolate in a heatproof bowl over a saucepan of simmering water, double-boiler style. Stir regularly for around five minutes (don’t let the chocolate seize!) until it has melted completely and combined.
  • Pour the chocolate mixture over the slice. Place it back in the fridge for at least an hour to set. Do not be tempted to cut it before then.
  • Once completely set and you’ve dutifully waited an hour, it's time to slice and enjoy!

Notes

  • Leave in larger slices for dessert portions, serving with vanilla ice cream. Alternatively, cut into smaller bite-sized morsels to feed a crowd.
