Munchy and crunchy homemade granola recipe

Like to add some crunch to your yoghurt brekkie? Me too! My kids and I love to munch on granola, but I refuse to pay big money for tiny boxes at the supermarket – better yet, I can make it at home and omit the nuts so the kids can safely take it to school to double up as trail mix.

Homemade granola ingredients

  • 150g honey
  • 50g butter
  • 300g Uncle Toby's traditional rolled oats
  • 100g sunflower seeds
  • 100g sultanas
  • 100g dried sweet cranberries
  • 100g pepitas
  • Handful of dried apples, diced
  • 60g desiccated coconut
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Method

  • Preheat the oven to 150°C and line two trays with baking paper.
  • Melt the butter and honey together in your Thermomix for 2½ minutes / 50° / reverse speed 2. Alternatively, melt together in a small saucepan over medium heat, on the stove top.
  • Add all remaining ingredients except for the cinnamon and nutmeg to the Thermomix bowl. Heat for 3 minutes / 50° / reverse speed 2.
  • Alternatively, combine remaining ingredients (excluding spices) in a large mixing bowl and stir in the melted honey. Stir until well combined.
  • Spread the granola mix over two trays – try to keep some clumps in it, there’s nothing better than granola clusters! Combine the cinnamon and nutmeg and sprinkle over the top of the trays – be as light or heavy handed as you please.
  • Cook for 11 minutes, take the trays out of the oven and give the granola a flip over with an egg slide. Cook for a further 7 minutes or until golden, but keep an eye on it – it can burn quickly!
  • Allow to cool on the trays and transfer to an airtight container.

Notes

  • Full of all of your favourite things, granola can easily be made using your stash of dried fruits.
  • Delicious on yoghurt, stewed fruit or ice cream, this granola will never be wasted – there will always be someone snacking on this beautiful crunchy mix.
  • I’ve used my Thermomix, but you can just as easily use your stove top.
